Recipies I use

Here is a list of recipes Autumn uses. These are not our recipes. We've found them online over the last couple of year. They are the recipes we hand wrote down and placed in a binder. If you know who's recipes these are please inform us in the comments below. We want to give credit where credit is due.

Lemonade.

2 cups sugar.
3/4 gallon spring or filtered water.
2 cups of fresh squeezed lemon juice.

In a small pan add 2 cups of water and 2 cups of sugar and put over low heat. Stir often until all sugar has dissolved. In a gallon container add ice, then the simple syrup (sugar water mix) and 2 cups of lemon juice. Add more water and ice if needed until gallon container is full. Stir and enjoy.
(For strawberry lemonade Cut up 3 large strawberries. place in a cup add 1 tablespoon of sugar. Sir, cover then chill for 30 mins. Add it to the lemonade when you add the lemon juice.)

Chocolate Chip Cookies.

1 heaping cup of Flour (unsifted).
1/2 teaspoon Baking Soda.
1/2 teaspoon salt.
1/2 cup softened unsalted butter.
1/4 heaping cup of sugar.
1/2 teaspoon vanilla extract.
1 egg.
1 cup of semi sweetened chocolate chips.
1/4 heaping cup of brown sugar.
1/4 finely chopped nuts (optional)

Preheat oven to 375 degrees
In a small bowl, sift together flour, baking soda and salt. In a large bowl combined, butter, sugars and vanilla extract. Add in 1 egg. Slowly mix in the sifted dry mix. Add chocolate chips and chopped nuts then mix well. Ball up the dough and place on a greased pan.
Bake 8 to 10 mins or until lightly browned. Enjoy.

Yellow Cake.

1 cup sugar.
1/2 cup softened unsalted butter.
2 eggs
2 teaspoons vanilla extract.
1 and 1/2 cups flour.
1 and 3/4 teaspoons of baking powder.
1/2 cup milk.

Preheat oven to 350 degrees.
In a small bowl sift together flour and baking powder and set aside. In a large bowl, combined sugar and butter and mix until creamy. Beat in eggs 1 at a time. Stir in vanilla extract. Slowly add in dry mix. Add milk and stir till smooth. Do not over stir! Add batter into a greased 9 x 9 pan.

Bake 30 to 40 mins or until a toothpick will come out clean for cakes.
Bake 20 to 25 mins or until a toothpick will come out clean for cupcakes.

Chocolate Frosting

3 Tablespoons softened unsalted butter.
3 Tablespoons cocoa powder.
1 Tablespoon honey.
1 Teaspoon vanilla extract.
1 cup confectionery sugar.

In a bowl mix all ingredients together. Then spread on warm cake, brownies or cupcakes.

Banana Nut Bread

2 cups of flour.
1/2 cup softened unsalted butter
3 or 4 ripe bananas
3/4 cup chopped nuts
1/2 teaspoon salt
1 cup sugar
2 eggs
1 teaspoon baking soda

Preheat oven to 350 degrees
In a bowl mash bananas, set aside.
In a large bowl mix sugar and butter until creamy. Add all other ingredients, mix well.
Bake 35 to for mins for muffins, 40 to 45 mins for small loafs and 50 mins to an hour for large loafs. Or until a toothpick pulls out clean from the center.

Oatmeal Cookies

1 cup brown sugar
1/2 cup salted butter softened
1 teaspoon vanilla
1 egg
3/4 cup flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 and 1/2 cups oats

Preheat oven to 350 degrees
In a large bowl mix together brown sugar and butter until fluffy. Mix in the vanilla then the egg. In a separate bowl mix flour, salt and baking soda. Slowly add dry mix to the creamy mix. Add oats mix well.

Bake on greased baking pans for 11 to 14 mins.

Butter cream Frosting.

1/2 cup unsalted butter softened.
3 cups confectionery sugar.
1 teaspoon vanilla extract.
1/4 cup milk

In a large bowl mix  butter with mixer for 5 mins on medium speed. Slowly mix in 1 cup sifted confectionery sugar and mix on low. Mix in 1 more cup of confectionery sugar and add vanilla extract and mix. Add last cup of confectionery sugar then slowly mix in milk until desired thickness.

Optional Add some fruit to the mix like a 1/2 pint of blueberries.
